Butter Pecan Cake
Ingredients:
2 2/3 cups chopped pecans
1 1/4 cups softened butter
2 cups granulated sugar
4 eggs
2 tsp vanilla extraxt
3 cups all purpose flour
1/2 tsp salt
2 tsp baking powder
1 cup milk
Directions:
Preheat oven to 350 degrees
Toast nuts and 1/4 cup of the butter in the oven and set aside
In a large bowl cream together the sugar and remaining 1 cup of butter till fluffy
add one egg in at a time
Add in vanilla
In a separate bowl combine flour, salt, and baking powder
Mix into butter mixture alternating with milk
Stir in 1 1/3 cups of the pecans
Bake at 350 degrees until a toothpick comes out clean
Allow to cool completely then apply icing of your choice and top with remaining pecans
