Butter Pecan Cake

Ingredients:

  • 2 2/3 cups chopped pecans

  • 1 1/4 cups softened butter

  • 2 cups granulated sugar

  • 4 eggs

  • 2 tsp vanilla extraxt

  • 3 cups all purpose flour

  • 1/2 tsp salt

  • 2 tsp baking powder

  • 1 cup milk

Directions:

  1. Preheat oven to 350 degrees

  2. Toast nuts and 1/4 cup of the butter in the oven and set aside

  3. In a large bowl cream together the sugar and remaining 1 cup of butter till fluffy

  4. add one egg in at a time

  5. Add in vanilla

  6. In a separate bowl combine flour, salt, and baking powder

  7. Mix into butter mixture alternating with milk

  8. Stir in 1 1/3 cups of the pecans

  9. Bake at 350 degrees until a toothpick comes out clean

  10. Allow to cool completely then apply icing of your choice and top with remaining pecans
