Ingredients for the chocolate base:

1/4 cup margarine

1/4 cup granulated sugar

1 egg

3 Tablespoons cocoa powder

1/4 tsp. salt

2 cups crushed graham crackers

1 cup sweetened shredded coconut

1/2 cup finely chopped nuts

Ingredients for the cream filling:

1/4 cup margarine

3 Tablespoons 2% milk

3 Tablespoons instant vanilla pudding mix

2 cups powdered sugar

Ingredients for the chocolate coating:

1 whole 11.5 oz package of Semi sweet chocolate chips

Equipment

One 7”x11” glass pan

One double boiler

Room in your refrigerator for the pan

Directions:

Let’s start with the base layer.

  1. In a double boiler cook together your butter, sugar, egg, cocoa powder, and salt

  2. once everything has incorporated together add in your crushed graham crackers, coconut, and chopped nuts

  3. Once you’ve got all of that mixed in press the mixture into your 7”x11” pan and set it aside

Okay, now for cream filling

  1. Blend together your milk, vanilla pudding mix, and powdered sugar

  2. Spread this evenly over your base layer

  3. Refrigerate for at least 15 mins

Once the first two layers have cooled we can start on our chocolate coating

  1. Melt the chocolate chips (I use a double boiler but mom and grandma just used the microwave

  2. Spread the chocolate evenly over the cooled cream layer

  3. Put the whole thing back in the Fridge until fully set (I like to leave it overnight because otherwise I loose patience and try to cut into it while the chocolate is still soft)

  4. Use a sharp knife to cut into bars

  5. Keep them cool until ready to serve
